Zara's Salsa (sort of)

Last year we met a new friend from Monterrey, Mexico.  For a few hours, she transformed my kitchen into an exotic, spicy, authentically Latin cocina.  I now make this Salsa Verde fairly often, but I skip a couple of steps, use less pots, removed the oil, and generally add more jalapeños :)  Serve this warm with corn chips and you will be tempted to eat it out of the bowl with a spoon - Bueno!

Recipe:  Zara's Salsa Verde - Jan's Version
10 Tomatillos
1 Large Tomato
1/2 Onion - diced
1, 2, 3, or 4 Jalapeños - sliced - seed in if you want the spice, seeded if you don't
3 or 4 Cloves Garlic
1 Cup Cilantro
Salt & Pepper

All ingredients just need to be rough cut, as they will all be going in the food pro or blender.  In a sauce pan, put the tomatillos, tomato, garlic, and jalapeños.  Add enough water to just cover the fruit.  Cook over medium heat until the tomatillos are soft and the water has a reddish brown tinge.  Remove from heat and remove the fruit from the water with a slotted spoon and place in the food pro.  Meanwhile add the onions to the hot water for a minute or two.  Process the salsa in the food pro, add the onions and cilantro and process again.

Return to the saucepan and simmer until water has been reduced and is the desired consistency.  Serve warm.
