Pesto Chicken

Here is an example of how to utilize my pesto that from one of my first posts.  The only thing I did different was added a few walnuts to the pine nuts while toasting them and sliced the garlic and toasted that as well.

Next I sprayed my pan with a little olive oil and over high heat, brown several pieces of thinly sliced chicken breast (air chilled, organic).  Once each side was browned, I put a thin layer of pesto in a baking dish, added the chicken, and covered with more pesto.  I then baked it at 375 degrees for about 20 - 30 minutes.  Delish.
