I don't know why I always forget about kabobs - they're super easy and you get to incorporate a vegetable and a protein at the same time. You could even partially cook some Yukon or Redskin potatoes and add those to the skewer and you have an entire meal on a stick. Brilliant.
You can use anything for a marinade - most will have a base of an oil and a vinegar. If you use a bottled BBQ sauce, do your body a favour and skip one that is sweetened with high fructose corn syrup.
A couple of my favourites are a Korean BBQ and a Chimichurri.
Recipe: Korean BBQ Marinade
To taste:
Soy sauce
Sesame oil
Garlic
Rice wine
Brown sugar
Recipe: Chimichurri
1/4 cup red wine vinegar
1/2 teaspoon coarse salt
1 head of garlic
1 shallot
1 jalapeño finely chopped
1 handful fresh cilantro
1 handful fresh flat leaf parsley
1 teaspoon oregano
1/2 cup olive oil
Process all in a food processor or blender. Can be used as a marinade or sauce.
