If your only experience with beets is your grandmother's pickled beets, or canned beets during the holidays, then I can understand your hesitation. However, if you try fresh beets, peeled, sliced and simply roasted, you will see what you have been missing. Baby beets are slightly sweeter, but any beet prepared this way is a little slice of heaven.
Toss the sliced beets with a little drizzle of olive oil, salt & pepper and maybe a wee bit of balsamic vinegar. Eat them as is as a side, or add them to a salad with some goat cheese.
